Sweet Potato Bake

Who says comfort food can't be healthy? This sweet potato bake is just as nutritious as it is delicious!


  • Serves 6
  • Roasted sweet potatoes mashed
  • 1/2 tsp salt
  • 2 eggs beaten
  • 1/2 cup low fat milk
  • 1 tsp vanilla extract
  • 2 Tbsp brown sugar
  • 1/3 cup all-purpose flour
  • 1 cup chopped pecans
  • 1/4 cup (1/2 stick trans fat free margarine


Roasting Sweet Potatoes:

  • Preheat oven to 400.
  • With a fork pierce sweet potato skin 5-6 times.
  • Place on baking sheet lined with foil. bake until tender, 45 minutes to 1 hour.

After potatoes are roasted:

  • Preheat oven to 350°.
  • In a large bowl, combine the potatoes, salt, eggs, milk and vanilla.
  • Pour mixture into a 13 x 9–inch glass baking dish.
  • In a small bowl, combine the brown sugar, flour, pecans and margarine and mix by hand until crumbly.
  • Sprinkle topping over the potatoes and bake about 30 to 40 minutes, or until warmed through.
