What to do with holiday leftovers
Holiday meals can leave you with a lot of leftover turkey. Turkey is a lean meat that is low in fat and high in protein. Don’t let it go to waste. Learn ways you can still enjoy your holiday turkey the next day.
- Make a turkey salad sandwich. Mix light mayonnaise with fat free sour cream and stir in diced turkey, chopped celery and a little Dijon mustard. Sprinkle in some pecans or walnuts and serve on whole grain bread or roll.
- Add diced or chopped turkey to your favorite homemade soup or low-fat canned soup, like chicken noodle or minestrone.
- Use shredded turkey instead of chicken in enchiladas, quesadillas and tamales.
- Make your favorite chili recipe and add shredded or dicked turkey instead of beef.
- Make a turkey omelet for breakfast. Mix it with onions, avocado, broccoli, peppers and low-fat cheese.
